1 package frozen Potatoes O'Brien
1/2 lb ham cubed
1 dozen eggs, beaten
2 TBS cooking oil
Preheat large skillet or dutch oven. Add oil and heat about 30 seconds. Add
frozen potatoes. Stir often to prevent sticking. Cook until slightly browned.
Add ham and cook another 3-4 minutes. Add eggs and scramble everything
together.
Serve alone or add shredded cheese and or salsa
