Lil's Corn beef Hash

3 slices of bacon ( I use the pre-cooked kind)
1 medium onion chopped
1 can of potatoes chopped up into cubes ( or frozen hash browns )
butter
1 can of corn beef
salt to taste
Snip bacon into small pieces and cook over high heat in a cast iron frying
pan. Add onions and cook till dark brown. Add potatoes and stir till the
potatoes are dark golden. Add butter as necessary to get the
potatoes really crispy. Mix in the corn beef in small pieces. Pat
everything down into the frying pan and mix up again. The longer it
cooks the tastier it gets. Add salt to taste.
It's one those recipes that taste even better warmed up the next day.
P.S. if you have some hot sausage cut up a link and cook up with the bacon
and onions-We like merguese.
